Festive Vegan Eggplant Dip for the Holidays

This delectable Mediterranean inspired dip, comprised of creamy roasted eggplant, lemon juice, tahini, garlic cumin and herbs is the ideal appetizer or snack to serve at any party or gathering.

Make it extra luxurious and creamy by topping off our recipe with omega-3 rich Udo’s Oil from Flora. And add fresh herbs, olives and pine nuts for a tasty dish you’ll be eager to repeat again and again.

Ingredients You’ll Need (For the Dip)
Eggplant: For ease and convenience, larger varieties of eggplants such as globe eggplants (or American Eggplants) found at most grocery stores are ideal. But any variety will do; just remember this recipe can only use one type at a time!

No matter which variety you purchase, be sure to look for eggplants which feel firm to the touch and are heavy for their size. Furthermore, they should be free from bruises or soft spots.

Healthy tip: Eggplants are packed with fiber and antioxidants, providing essential sources of vitamins C, K and B6; Thiamine; Niacin; Magnesium, Manganese, Phosphorous Copper Fiber Folic Acid Potassium

Garlic: One large clove will provide plenty of garlic flavor; however, for those who crave even more, adding another is recommended.

Tahini: Tahini is a creamy sesame paste condiment used throughout the Middle East that adds an irresistibly toasty creaminess to this recipe. If you are sensitive to sesame seeds, simply skip this ingredient altogether.

Lemon Juice and Zest: Lemon juice adds a zesty brightness that’s sure to brighten any meal, while organic lemons make for optimal zesting! All it takes to enjoy these delightful dishes is one small lemon and some zest!

Salt + Spices: Cumin + paprika bring some zesty spice to this dip, while adding salt to taste will balance all the different tastes and provide the right balance between them all.
